Where can I buy chipotle and ancho chilies in Metro Manila?
Q. I want to cook Mexican dishes but I can't seem to find any dried chipotle or ancho chili peppers anywhere in Metro Manila. I've looked at nearly every deli and supermarket in the metro. If anyone knows where to find them, please let me know. Canned chipotle chilies are also fine with me. Thanks!

A. Though a very good question, I believe you will have a better chance at a correct answer on the Yahoo International Philippines site. You may have to also improvise and try and find your chilis in powdered form and create an adobo sauce/ paste yourself. The Philippines have several chilis available that you could smoke and dry your self also to create the desired finished product.

What is chipotle and how is it used?

A. Chipotle is a smoked jalapeno pepper. It's used as a flavoring ingredient in many dishes. It is smoky and spicy. I think it would be great on your salmon as mentioned! You probably want to put some on before and after it cooks. I'm sure you could use any other meats, but pork would be especially good!

A. 1/2 pound Tomatillo, cut into strips 2 teaspoons Chipotle chiles, finely chopped 1/4 cup onion, finely chopped 2 tablespoons cilantro, finely chopped 2 teaspoons fresh lemon juice 1/2 teaspoon lemon zest 1 teaspoon fresh lime juice 1/4 teaspoon salt 1/4 teaspoon ground pepper In a medium bowl, combine Tomatillo, chiles, onion, cilantro, lemon juice, lemon zest, lime juice, salt, and pepper. Cover and refrigerate, at least 1 hour and better a day or two, to allow the flavors to mix.

Chipotle restaurant: fajita veggies and black bean recipes?
Q. I am trying to re-create a Chiptole fajita veggie burrito at home. I have recipes for the cilantro-lime rice and roasted corn salsa. Since everything in the burrito is combined, it is hard to tell if the sauteed veggies and black beans have any sort of seasoning, or are prepared in any certain way. What can I do with leftover chipotle peppers in adobo sauce?

A. If you like mushrooms and onions, here ya go... Cut 2 portabella caps into large chunks, about 3/4" or so. Do the same with a couple of red onions (peel, slice thick, and crosscut). Heat 3 tblsps. olive oil in a large skillet. Add your veggies and cook over medium low heat until just starting to soften. Stir in your leftover chipotles and sauce. Heat your oven to 375 F. Use a ceramic flan pan or round casserole dish, lightly oiled. Turn the veggies into it. Sprinkle with 1 1/2 tsps. Mediterranean oregano and top with 1 1/4 C. shredded Monterey Jack cheese. Pop in and bake 20 minutes or so. Remove, let stand 3-5 minutes and serve. Great side dish with pork roast, carne asada, or with a milder chicken dish when having company and you still… [cont.]

A. Best bet is to buy the peppers already dried, and put them in your blender and pulverize them. Sift out the seed if you wish. Cover the blender or processor with a damp towel when doing this. It will greatly reduce your sneezing by containing the dust better:)

Q. I am a fairly regular customer at Chipotle Mexican Grill and I have always stuck to what on the menu there such as burritos burrito bowls and salads. I am also a fan of quesadillas however they are not on the menu there. If I ask them to make a chicken and cheese one will they make it. A. 1 teaspoon vegetable oil or butter 2 teaspoons fresh cilantro 2/3 cup white basmati rice 1 cup water 1/2 teaspoon salt 1 lime In a 2-quart heavy saucepan, heat oil or butter over low heat, stirring occasionally until melted. Add rice and lime juice, stir for 1 minute. Add water and salt, bring to a full rolling boil.(Some people have had success with 1 cup of water, but when I've made it with 2 it worked for me). At boiling, cover, turn down to simmer over low heat until rice is tender and the water is absorbed, about 25 minutes. Add in the cilantro and fluff rice with a fork.

I am a former chef and use those peppers in the adobo sauce quite often, there a bit smokey from the dried and smoked jalapeno chipolte peppers and the sauce adds a bit of tangy a decent substitute would be a bit of hot sauce mixed with a steak sauce like A 1 or Heinz 57, I would use 1 tablespoon of St Sc and 1 teaspoon of hot sauce (Tabasco or Franks), but it all depends on your heat levels, more for a hotter flavour and less for a milder taste. even a bit of ketchup in will tone down the heat, no more than 1 teaspoon per 2 cups of sauce.

Creamy Chipotle Chile Sauce: 30 min 30 min prep 4 servings 1/4 cup mayonnaise 1/4 cup sour cream 2 teaspoons canned chipotle chiles in adobo 1 small garlic clove, minced 2 teaspoons minced fresh cilantro leaves 1 teaspoon lime limes, juice of Mix all of the ingredients in a small bowl.
