How many whipped creams pies per can of whipped cream?
Q. Tomorrow for a fundraiser, a club that I'm in is charging students to pie teachers (who have volunteered) in the face. My question is about how many whipped creams pies (the pie tin is about the size of a normal paper plate with elevated edges) could be made with 1 can of whipped cream (reddi-whip--it's the same size as any other whipped cream can). I've bought 6 cans and we want to sell at least 70 or 80 pies. Do you think we have enough whipped cream?

How can I whip cream and keep the whipped cream nice for several hours until dessert time?
Q. I have 20-25 people for Thanksgiving dinner. Because my house is small, we eat buffet style and set up tables in several rooms. By the time I get to eat, the guys are usually finished and before we can stack the dirty dishes, they're ready for pie. It always takes a while to get the cream whipped (we are traditionalists so must have real fresh whipped cream). How can I whip the cream before dinner and still have nice stiff whipped cream several hours later?

A. set the bowl of it on another bowl filled with ice, cover with plastic wrap and put it in the fridge. take it out of the ice bowl and onto the counter about 10 minutes before serving.

Why does my ice cream always turn out like frozen whipped cream?
Q. My ice cream always turns out fluffy and whipped in my ice cream maker. It doesn't freeze well and doesn't have a dense texture to it. I am using an electric ice cream maker. Has anyone else run into this problem or does someone know how to fix it? I am using an electric ice cream maker, with 1 quart of capacity. I am using 2 cups heavy cream and 1 cup whole milk. The ingredients are think enough, but how do I prevent it from whipping?

A. It sounds to me like too much air is being whipped into the ice cream or you are using ingredients without an appropriate cream content. The heavier your milk, the heavier the ice cream. skim milk, 2 percent, etc. will make light ice cream. You want Heavy whipping cream, Evaporated milk or whole milk as the base. Also, I have heard a friend complain that the pre packaged ice cream "mixes" that she has used in her electric ice cream maker really sucked. She thought it was not ice creamy like at all and in fact tasted like sweetened air. Try some old fashioned recipes like in a good OLD cook book, or look up some old fashioned recipes on the internet. What cream works best and quick for Dark Circles?
Q. I am getting married real soon, and i have real bad dark circles under my eyes. I need a cream that works real good but since i'm on a budget i don't want a cream thats like hundreds of dollars. Any suggestions.
Asked by Jiggy - Wed Feb 27 11:03:21 2008 - - 5 Answers - 0 Comments
A. I use Benefit's Eye-con eye cream which is specially designed for under-eye dark circles. It's $28, so reasonable enough & the jar lasts for ages. As well as preparing your skin for your big day, talk to whoever will be doing your make-up on the day & explain you are concerned about the circles. He/she will be able to recommend some make-up looks to hide any circles & you could ask them to try out different looks on you before the big day, so you'll have one less thing to worry about.

Can I omit cream of tartar from a sponge cake recipe without damaging the end result?
Q. since sponge cakes are made of so much egg whites, (and im not sure if this is correct, but i always thought of cream of tartar as a stabilizer), would the cake deflate if i dont use cream of tartar? the recipe calls for baking powder and cream of tartar, not baking soda, so i cant substitute using baking powder.

A. creme of tartar In food, potassium bitartrate is used for: Stabilizing egg whites, increasing their heat tolerance and volume; Frequent combination with baking soda (which needs an acid ingredient to activate it) in formulations of baking powder. Why not try this recipe which is a simple chemical free recipe. with a mechanical whisk beat six eggs and 125gr of sugar until a stiff foam(best done in a kenwood mixer type machine) then slow the machine right down and gently fold in ,using the machine,125 gr of sifted cake flour. For chocolate sponge sift in with the flour 20gr cocoa though this would benefit from 5gr of baking powder.Pour into a greased ,floured tin and bake for approx 20 min at 180c

What hair cream would you recommend before iron straightening?
Q. Hi, I found that when I use a spray before straightening it works but is quite stiff. Years ago I found a cream and can't remember what it was called. You put it in your towel dried hair, blow dried any moisture out and then straightened and it was brilliant. Can anyone recommend a cream? Or can I just use a hair serum?
Asked by celfone71 - Sun Dec 16 17:23:09 2007 - - 2 Answers - 0 Comments
A. I use Friz-Ease thermal protection formula (orange package). This works great I have really curly hair and I put it on when my hair is damp, blow dry it and then flat iron it. It comes out smooth w/ no frizz and the serum helps protect against heat damage.

How can I thicken up single cream?
Q. I've just got an ice-cream maker for xmas and hastily used single cream in the recipe instead of double cream. Is there any way I can thicken it up to more the consistency of double cream so that it will set better? (I'd rather not start again as I have to freeze the canister for another 24 hours!) Thanks. The thing is that I have tried it and it hasn't worked... The instructions for the ice-cream maker say that if it hasn't set after 40 minutes it isn't likely to.
Asked by chubbysimba - Sat Dec 27 10:11:54 2008 - - 4 Answers - 0 Comments
A. You don't need to thicken it up. You can make "ice cream" out of milk. It will actually setup faster (water freezes better than fat). You will be fine. Do not use any artificial thickener like flour or cornstarch.

How much cream and sugar does Dunkin Donuts put in their coffee?
Q. I just moved to Arkansas from Boston and am missing DD terribly. I always ordered a coffee with cream and sugar and I can never get the portions right at home. Oh and do they use milk as cream or do they use an actual creamer? Thanks!

A. At DD, you have to tell them how cream and sugar to put into the coffee; for example, 2 creams, 2 sugars = 2 teaspoons of cream and 2 teaspoons of sugar. SAC

How do I stop cream splitting in a recipe?
Q. It's in a peppercorn sauce. I fry steak (rolled in peppercorns) in butter and then flambeau it with a shot of brandy before adding the cream. The cream splits. Do I need to use single or double? Do I need to reduce the heat when I add the cream as the resulting sauce although nice looks awful. Thanks in advance
Asked by corriecorka - Sat Oct 11 17:39:36 2008 - - 6 Answers - 0 Comments
A. First try turning down the heat. You can even take it off the heat if adding the cream is the last step. That's how you make stroganoff that holds together nicely. Milk proteins don't like high heat. If that doesn't work, try doing that plus adding a small amount of the brandy butter from the pan to the cream in the cup before adding the cream to the pan. That will ease the transition by heating the cream more slowly. This is an old chef trick for dairy in sauces and soups. If *that* doesn't work, you need cream with a higher fat content.

A. Place your evaporated milk in the freezer until its super cold and then beat at high speed with an electric mixer. Add sugar and vanilla. You won't get the consistency of heavy whipping cream, but you should get a resonable result.

What foot cream is good for really tough feet?
Q. I have tried several OTC foot lotions/creams. I have gotten professional pedicures too. I have even used the "ped egg" and various foot files. My feet get very tender after using these files, but the rough skin is still there. What is an effective foot cream/product to soften my feet?

A. Zim's Crack Cream. Ridiculous name, fantastic product. My ex had extremely dry, cracked and tough skin on his feet and the tips of his fingers. When it became particularly bad (i.e. during the winter), he would slather a bit of this stuff on and wrap with a rubber glove (on the hand) or a sock (foot, obviously), and sleep overnight with it on. That is only necessary in extreme cases, because I have used it before on less severely tough skin of my own without having to cover it with anything and it worked great.
