What is the difference between high grade and normal flour in baking?
Q. I want to bake blueberry muffins, but the recipe requires 2 1/2 cups of flour, and I only have 1 1/2. I have plenty of high grade flour, for bread making, however. Can I mix normal flour with high grade? Can I use just high grade? Or do I need to get more normal flour?

A. Milling Quality is based on flour yield from softness equivalent and micro test weight. High flour yield is associated with high straight-grade flour yield and with low separation . The flour yield, which is known to relate to softness. i think you should use the proper measurements when baking, but be aware that you may get a heavier or lighter product than with normal flour. Normal All Purpose flour is heavily sifted, the difference between regular All Purpose and High Yield is the milling and gluten, which means your baked good may come out crustier. What I can suggest is that you sift the high yield flour about three times then measure it out for what you need, it should be alright.
