Mexican friend used to cook a vat of pinto beans to put in a tortilla and eat. Any idea what kind of recipe?
Q. Mexican friend's grandparents would cook up a vat of pinto beans and we would put them in fresh tortillas and roll them up and eat them. The pinto beans seemed basic, but unsure of what exactly was put in them when cooked. Is there a traditional Mexican recipie similar to what I'm describing?

A. The traditional method for cooking pinto beans is to sort the beans and remove broken beans and any trash that may be in them. Soak the beans overnight in enough water to cover the beans, the beans are going to expand to about twice their original volume so it takes a lot more water that you would think. The next day the beans are drained completely, add enough water to cover the beans and boil until tender. Do not season the beans until they are nearly cooked as salt will toughen the beans. If the beans start to dry out during cooking it should be replaced with boiling water to keep the beans tender. A. Rick Bayless is the American ambassador for authentic Mexican food. He has written several books, and appears on PBS weekly. Mexican Everyday has great but simple recipes. If you are interested in his other books, you can search his site. Mexico-One Plate At a Time is also really good. Most of the ingredients that cannot be found locally can be mail ordered, if you so desire. I also picked up a copy of Cooking With Baja Magic : Mouth-Watering Meals from the Enchanted Kitchens & Campfires of Baja. It has exciting recipes from the Baja region with all of it's Mexican influences.

Q. Mexican culture seems to be very cherished throughout Latin America. A. I can't speak for Dom. Rep., but I do know they like Mexico and Mexicans very much in Puerto Rico. A Mexican friend of mine moved there many years ago and she dances in a folkloric ballet that performs only Mexican dances and is very popular over there -- they are often invited in TV shows and stuff. And of course not all of the dancers are mexican... so it looks like PR girls love Mexican typical dances, which makes me very proud and glad!

A. They do not need a visa to go to Canada or Spain. However, if the travel plans take them through a US airport they do need a visa for the US even though they are not leaving the airport. At one time there was a transit visa provision but after 9/11 that was done away with.

A. As a Mexican citizen, your husband must use a Mexican passport. Only American citizens may get an American passport ( and, by the way, it only takes 4 weeks to get one). He does not need a passport to enter Mexico by LAND. He SHOULD have one to FLY, tho I know of Mexican citizens who have flown to Mexico without one. He will need a Mexican passport to fly OUT of Mexico. You can call the airline and verify this. He can get a new Mexican Passport at the nearest Mexican consulate in just a few days if he has his birth certificate. How do you know you have more of a "spanish" accent while speaking the foreign language? chances are your expressing the spanish accent in the french because they have similiar word structures, being that they are both romance languages descending from the languages spoken in Rome 1500 years ago. Whatever one's native language happens to be, determines how that person is accustomed to using thier mouth to pronounce words, etc...this is why we always hear accents in other languages, when people learn the langauge later in life. Since spanish was your first language, it is likely that this is influencing the way you move your mouth when you speak a "new" language, much moreso than with english. Hope this helped.

Mexico has historically been rather paranoid of rebellion, so it's gun laws have always been very strict.
