Has anyone ever heard of a pandan leaf?
Q. i found a Thai recipie online for pandan chicken. are the leaves good? also where can I get them? also wondering what corriander root is? thanks for your help.

A. Cooking with pandan leaves or using it to wrap foods is meant to impart a subtle yet distinctive pandan fragrance into the food. Unlike desserts, you can't use pandan essence for this. Anyway most pandan essence is fake & artificially made, being way too overpowering & green. I know the difficulties of finding authentic Asian ingredients in Western countries, just try your luck at your local Asian grocery store. As for coriander root, the whole coriander plant is used in Thai cooking eg. when making curry pastes. The taste would be different if the roots are left out but sometimes you've no choice if you can't find coriander plants with attached roots. But at least use fresh coriander, not dried herbs. A. I would suggest you put them in a plastic storage bag in the crisper in a fridge. Then make your nasi lemak ahead, or at least the steps that use the leaves ie' make rice a few days before you need it. You can also pound out the juice and store it. If you don't want to pound it, put it in a blender with some water and strain out the juice. There is more info at the following site, and you can e-mail any questions to Andrea Nguyen. A. I am familiar with Kuihs Desserts, primarily from Malaysia and other Asian countries, but none that wrap the banana in pandan leaf. Usually wrapped in a banana leaf, and pandan leaf is used in the pot and usually reduce with cream of coconut, and rice. Always thought the pandan leaf was to fibrous to use. Try doing search on Kuihs recipes, or Malay Kuihs and see if anything looks familiar. Sorry couldn't be more of a help.
