Replace Pandan leaf in a recipe?
Q. Can any herb or combination of spices replace Pandan leaf in a recipe? Trying to cook Indonesian food but the leaf is the only thing not availble in my city.
Asked by Marc - Wed Apr 2 11:52:18 2008 - - 4 Answers - 0 Comments
A. Are you using the leaf to wrap the food as a packet? In which case you could replace the pandan leaf with banana leaf or even use wax paper, parchment paper or aluminum foil . As an herb, the essence is known as "kewra" --- if you have an Indian store in town, they will carry it. It's also called screw pine leaf, many Asian stores will carry it (check the frozen section).

What's in pandan leaves (Pandanus amaryllifolius) that repels cockroaches?
Q. This is for a research project. I've read in wikipedia that cockroaches hate the smell of pandan leaves so I wondered what is in them. You could also provide me the leaf's chemical composition or if there's been any study about it and where i can find it. Thank you very much! Any help is appreciated.

A. It`s the volatile oil of Pandanus amaryllifolius, which repels cockroaches and other vermin too. The active principles are mainly terpenes and sesquiterpene hydrocarbons (6-42%), as well as a major aroma component 2-acetyl-1-pyrroline. See publication:

A. They are also known as "Screw Pine Leaves", I am a former chef and worked in Singapore and we used them for many dishes but sweet and savoury, I currently live in Toronto Canada, and we have a large Asian community here, they are available fresh at times, frozen, in a mash form and I have got a bottle of pandan extract (I also have one that is durian flavoured). They are actually quite easy to grow in you home in a flower pot.

Q. I am traveling from Malaysia to the States and when I get home, I'd like to make nasi lemak. How do I store my pandan leaves? I know it they will be hard to find at home so I'm taking my own. I leave on the 18th but won't be using them for like 15 days. Or perhaps suggest a suitable substitution in case mine go bad. Thanks.

A. I buy them here in Toronto, and I also have found Pandan extract, they do freeze quite well, I would not buy them until before you come home, wrap them in newspaper and place in a plastic bag and put them in your checked baggage, you will not get them into the US in your carry on, as most botanical species, foreign plants are generally not allowed, I would just make sure you keep the receipt, as if they do x-ray your bag you may have explain what they are.

how to make syrup?
Q. Tomorrow is hari raya. You decide to help around the kitchen on raya eve. Weaving a ketupat, you observe your younger sister about to make a rose syrup in a pot over the stove. Having all the ingredients necessary ready, she proceeds to heat the half-filled pot with water. Immediately then she grabs a packet of sugar to pour into the pot before you cry-out her to stop. You mention that its not the way to make syrup. Half upset and half curious, your sister wants to know why. You ve seen your mother make syrup many times, and you know that after the water is boiled, sugar is poured, then the pandan leaf is inserted, and then the colouring is mixed in. you could always tell her that not adhering to the cooking order would not make the syrup… [cont.]
