Companies are always looking for ways to get a few tax breaks. Since money IS always an issue at a NPO how about doing a little personal barter with a few company's in your area. In exchange for a few gift cards from a restaurant you will put them in the newsletter or show them on the website. Then you can use these as incentives to the volunteers.
